Explore a mouthwatering photo journey Chef Sanchez-Iglesias sampling the flavors of Mexico City to find inspiration for his new restaurant opening at The Standard in London.

Michelin-Starred Chef Sanchez-Iglesias and his sous chef Josh Green along with The Standard’s Director of Food & Culture, Angela Dimayuga headed to Mexico City for an exploration into it’s incredibly colorful cuisine and culture. The journey acted as an opportunity for the team to search for inspiration for their restaurant set to open in The Standard, London in Summer of 2019. Although still without a name, the restaurant will fuse Mexican and Spanish cuisines as an homage to Sanchez-Iglesia’s roots. The team spent a long weekend sampling Mexican greens, herbs, seeds and historic Oaxacan food stand recipes before delving into the stands at El Pica 1, a local barbacoa spot. As seen in the delectable imagery, Sanchez-Iglesias will be pulling some of the various flavors from his experience with these Mexico City cuisines and bringing them to life in London with his own twist; and we’re excited to see how it tastes.

If your mouth isn't watering yet, it definitely will be when The Standard, London opens up this soon to be named rooftop restaurant in King's Cross this Summer.
